 The astonishing fact about food preservation is that it permeated every culture across the globe at nearly every moment in time. Food by its nature begins to spoil the moment it is harvested. Food preservation has enabled people to make roots and live in one place and form a community, rather than consume or harvest immediately. Each culture preserved their local food sources using the same basic methods of food preservation.

Anyone looking to learn safe home food preservation techniques or strengthen existing knowledge should take advantage of the popular Master Food Preservation 3-Day Training Tuesday, August 7 to Thursday, August 9, 2018. Cornell Cooperative Extension Sullivan County (CCESC) offers this hands-on comprehensive workshop series from 8:30 am to 4:30 pm each day in the Catskills Kitchen of its Extension Education Center on 64 Ferndale-Loomis Road in Liberty.

Judy Price, Cornell Cooperative Extension home food preservation expert, and Diane Whitten of Cornell Cooperative Extension Saratoga County will guide participants through hands-on demonstrations of all food preservation methods recommended by the US Department of Agriculture (USDA). No prior knowledge of food preservation is needed.

The training will include the scientific basis of food preservation, experience in hot water bath and pressure canning, gelled products and pickling, freezing and drying, and more. Pre- and post- testing as well as evening study are necessary. Program graduates will earn a certificate of participation, the first step in becoming a certified CCESC Master Food Preserver Volunteer.

Cost is $375.00 per person and includes instruction, a 265 page handbook, and lunch each day. Attendees will receive food samples prepared during the workshop. Partial scholarships are available.

Participants must wear closed toe shoes and long hair must be pulled back while in the Catskills Kitchen. In the event of special needs or dietary restrictions, the public should contact the office.
